Tequila Ocho was the world's first single-estate, vintage-dated tequila — every bottle names the rancho, the harvest year, and the elevation — and Boozemakers scored the Plata 90 and called it the education you need if you think all blancos taste the same. Carlos Camarena, the third-generation tequilero of La Alteña, created Ocho in 2008 with the late Tomas Estes, the Mexican government's first Tequila Ambassador, on the wine-world idea that agave, like grapes, tastes of where it grows; it's made at NOM 1474 in Arandas from 100% highland blue Weber agave from a single named field per vintage, slow-cooked in stone ovens, crushed by tahona, fermented with wild yeast in open wooden vats, double-distilled in copper, and bottled at 40% ABV, additive-free. Sip Tequila: cooked agave with bright citrus, black pepper, earth, and fresh grass on the nose, a full, expressive palate of agave, black pepper, cool mint, and tropical fruit, and a long, clean, refreshing finish. The house lists the Plata's aromas by field — clove, cardamom, ripe pineapple, and violets in one vintage. Boozemakers: at $45 it competes with Fortaleza and Siete Leguas on the same shelf, with the intellectual appeal of terroir on top. Honest note: buy two vintages and taste the difference — that's the whole point, and no other tequila lets you. Neat, in a copita.
